Tube Fish (Tongzi Yu)is another traditional dish from Weishan Lake.First， the head of a crucians is cut and its squamae is scratched，then the meat is cut into slices.Deep-fried，the slices turn into tube shapes，hence the name.Without fish bones and squamae，Tube Fish is tender and delicious.
